Thanks to the care paid to the vinification procedures, the Chianti Chigi Saracini is characterized by a ruby-red colour with unmistakable purple hues. Its aroma is sharp and captivating, reminiscent of blooms and small, red fruits; with ageing, its perfumes become organically more complex and mature. In its initial stage, the wine is fragrant and soft, yet with a remarkable tannic presence. For taste as well, time softens the Sangiovese natural exuberance, and over the years it lets surface a more balanced and harmonic taste

Planted in loose soil with a defined tuff character and excellently drained, the vineyards have a vinedensity between 3,500 and 6,500 plants per hectare.

The grapes are harvested at the right ripening stage, normally occurring towards the half of September, and are immediately dispatched to vinification. After a thorough de-stemming and subsequent crushing, the grapes are placet in appropriate, average capacity, stainless steel vats where alcoholic fermentation quickly sets in. The fermentation is accurately checked and monitored to optimize extraction of colour and structure, while simultaneously safeguarding the freshness of the grapes’ bouquet: to this effect, the temperature is maintained between 250C and 280C while short, must repassing procedures are carried out at pre-set times

After approximately 12 days of fermentation, the grape skins are left to steep in wine for a further 3 to 4 days, and only subsequently the new wine is finally removed from the skins. After the malo-lactic fermentation, the wine is cold-stabilized and thus prepared for market distribution by the spring after harvesting
