The Chianti Classico is one of the most prestigious wines in Tuscan oenology, the Reserve being its top qualitative expression in absolute. Its ruby-red colour has orange hues deriving from its long refinement; the aroma is characterized by the typical scents of tobacco, cocoa and vanilla. Its taste is round, soft, aristocratic, supported by remarkable tannins and well balanced by its long permanence in wood.

Sangiovese 90%, complementary grapes 10%.

Grapes are harvested at the right ripening stage, normally occurring in the middle of September, and are immediately sent to vinification, after a thorough and careful de-stemming/crushing. The stainless steel fermentation vats hold approximately 100hl and are entirely thermally regulated. From its start, fermentation is aided by skin must repassing operations, carried out 8-10 times a day to optimize the extraction of colour matter from the skins and ease wine homogenizing inside the vats. During this process, the fermentation temperature is constantly monitored to avoid it exceeds 28°-30°C. Once alcoholic fermentation is completed, the skins are kept to steep for a further 7-10 days, always with the aim to optimize tannins extraction. Racking precedes the new wine, storage time in steel tanks, to allow for the triggering and standard development of malo-lactic fermentation, after which the wine is transferred into oak barrels

During the month of January following harvesting, the wine is placed in French oak wood vats of different capacity and outflow, for a refinement period that current production norms set at 16 months. Once maturation in wood is completed, the wine is bottled and stocked for a further 5 months at least, before being put onto the market
