only parts of “Tenimenti Fontanafredda” estate vineyards which are capable of producing wines that will guarantee development of the highest quality and withstand the test of time are allocated to the making of the "Riserva", and only in the very best vintages. Owing to the natural properties which are intrinsic to these wines, the lengthy ageing process results in Barolos packed with tannins and capable of providing structure and power combined with great elegance and balance. In the glass, Barolo "Riserva" is a wine offering great emotions: ruby highlights still show on its deep garnet red colour, while its intense, clear-cut nose hints at black cherry, tobacco, dried mushrooms, spices such as nutmeg and pepper, and balsamic aromas conjuring up resin and mint. Sweet, velvety tannins blend nicely on its warm, smooth taste with fresh acidity, helping to ensure a long finish

the fermentation is traditional, lasting 12-15 days in stainless steel vats at a controlled temperature. The wine then stays on the skins for a further 25-30 days, with a “submerged head” to optimize the extraction of the polyphenolic substances

in order to be labelled as a "Reserve", by law Barolo must have undergone at least 5 years of maturing before it is released. For this wine, the first of these years is spent in barriques, and the next two in large wooden casks (made of Slavonian and Allier oak). Bottling is then followed by a minimum of a further two years of ageing, with the final length depending on the characteristics of the vintage
