70% Grenache, 25% Syrah, 5% Mourvèdre
The soil is manly composed of red clay and limestone and numerous pebbles
After a total desteming of the grapes, the harvest is placed in stainless steel vats where the natural temperature of fermentation helps maximum colour and tannins extraction. Without any addition of artificial yeast, maceration is made with careful regular racking in order to preserve the fruit and the aromatic potential during 8 days. The essential point in the process is to control temperature in a manner that it never comes up to 28°C. Each variety are vinified separately and stocked in thermo-regulated concrete vats in order to continue its evolution. The final blend in made when the Syrah and Grenache ends their fermentation.
The wine is then stock until the bottling in spring.
