70% Sémillon, 30% Sauvignon Blanc
Alluvial
11 to 18 year old vines. 100% Dry-land management for the Sémillon. Intensive and calculated irrigation was used for the Sauvignon Blanc to combat the heat, with the help of a high canopy protecting the grapes from sunburn.
Hand harvested at optimum ripeness and temperature. Grapes went over a sorting table selecting only the best grapes for the wine. Harvested at 22 degrees Balling. Yield 6 to 9 tons per hectare.
The grapes were pressed and barelled. Natural fermentation took place for 7 months in French oak barrels, which are 20% new barrels and 80% second fill barrels. R/S : 1.92 g/l.
