Our Saint Bris is best drunk young, within 4 years. The robe is straw-colour with grey hints. When the wine is young, the mouth offers exotic fruits fragrance such as grapefruit, and blackcurrant bud fragrance. Aromas become more mineral with age. Its mineral notes are very distinguishing from the other french wines produced from Sauvignon. This wine can be served with oysters and hot fish between 13 to 15°c.

Planted on the area of Saint Bris Le Vineux in the sixties. The sauvignon grape variety has successfully overcome all the steps to become regional appellation vintage Saint Bris in 2001. The sauvignon grapes are planted on clay limestone plateau borned during the beginning of tertiary era (Porlandien). This wine is not only unique from its taste but also from its origin. In fact, it is the only appellation in Burgundy produced from Sauvignon grape variety
The harvest starts as soon as the grapes are perfectly ripe.
The grapes are put in stainless steel vats during 24 hours for the skin maceration. Then they are pressed and clarified naturally between 7 to 10°c.

During the fermentation, the must is put in stainless steel vats with temperature control between 16 to 17°c for about 15 days. The wine stays in vats until bottling so as to keep its fragrance.
The malolactic fermentation is systematically realized.
