Our Irancy is best drunk after 5 years. Five years old is the best time to drink this wine. However it can be kept for 10 years old. With a traditional red ruby colour given by the pinot noir grape, the robe is also tinted of césar’s purple hints. On the palate, the soft and harmonious body of this wine offers spicy red berries flavour which are emphasized by César’s tannins. This wine can be served with broiled meat, little game, cooked meat and cheeses (except for Roquefort) about 18°c.
92 % Pinot-noir 8 % César
Village appellation since 1999. This blended wine is produced with 92% of pinot noir grape variety and 8% of an elder grate variety called “César”. The vine plants are planted on sunny slopes in front of Yonne valley which contains clay limestone soils borned during the end of secondary era (kimmeridgien).
After harvesting, the grapes are picked over and put in temperature controlled vats during fermentation. For an average of 15 days, the wine is kept in vats with frequent pumping over. The César grape variety is always harvested after pinot noir and both are blended during the rack.
Then the wine is aged for an average of 9 months in oak vats (6000 L) before bottling.
The malolactic fermentation is systematically realized.
