Deeply coloured, this wine is characterised by the complexity of its nose: summer fruits (fresh grapes and redcurrants, blackcurrants, blackberry and black cherry), combine with subtle vanilla notes of plums and dried orange zest. With aeration, the scents of spice, tobacco and liquorice are added to this heady fruity mixture of aromas. Maturing in oak barrels adds a layer of tannin. The silkiness of the flesh and the richness of the tannins add complexity, but not heaviness to this subtle but elegant wine. Soft notes of mint and spices (cardamom and clove) wrap themselves around your palate but leave a fresh end note that warrants a second taste to continue exploring the broad range of flavours and aromas this wine offers. Complexity and harmony are what distinguish Carminal and place it over above many of the other wines of its appellation. This wine will continue to evolve and mature over the next 8 years. Serving Suggestion: Carminal provides the perfect accompaniment to sophisticated dishes, in particular lamb or duck.

The red soils, rich in iron oxide, are characteristic of the vineyard and, are interlaced with limestone fissures which allow deep penetration of the vine roots.

Cold pre-fermentation phase to preserve the fruitiness. Long maceration of the de-stemmed grapes. Pressing and temperature monitored and adjusted according to taste testing. Regular pump over by hand. Limited remontage Wine Ageing Syrah & Carignan : In 225 litre French oak barrels for 12 months. A quarter of the barrels are renewed each year. Grenache in stainless steel vats.
