A full-bodied, well structured showcase Shiraz. The wine was matured in new French oak barrels and has a light peppery scent of ripe berries, perfume and spice. Will gain complexity with 3 to 5 years of bottle maturation. A serious wine to accompany fine cuisine. Good with aged steak, hearty stews, and smoked meat. 11 year old vines on 4-wire Perold trellising system . Drip irrigation controlled by a computer system through meters and tensiometers.
Harvesting done by hand. Yield 8 tons per hectare.
Style: Premium quality. Full-bodied, oak-matured red wine. Vinification: Produced from the best fruit available each vintage - hand-selected from a single vineyard. Fermented in oak barrels for 12 months - 90% French, 10% American - all new. Minimal intervention in the natural process of vinification, allowing both the cultivar and the terroir to express their individual characteristics. R/S 2.9 g/l
