A well-balanced Méthode Cap Classique (MCC) sparkling wine with upfront lime and citrus flavours. Attractive shortcake and lemon with soft, refined bubbles and dry finish. A blend of Chardonnay for its finesse and ageing ability, and Pinot Noir for body and fruit. Enjoy as an aperitif, with fresh oysters, sushi, fresh strawberries, or any seafood or fruit-based dishes. 16 year old vines on 4-wire Perold trellising system . Drip irrigation controlled by a computer system through meters and tensiometers.
Harvesting done by hand. Yield 8 tons per hectare.
Style: An elegant MCC Brut Sparkling Wine. Vinification: Whole bunch pressing, yielding only the best juice. Nine months on its primary lees. Sugar and special yeast added in bottle which goes through second fermentation for further nine months on its secondary lees adds extra dimension. Minimal intervention in the natural process of vinification, allowing both the cultivar and the terroir to express their individual characteristics. R/S 6.1 g/l
