TASTE : Full bodied , rotund, harmonoius, with a dry aftertaste. BEST MATCHES: Excellent with red meats , even better with game and mature cheeses .

Vinification (fermentation)

Méthode:Classical red vinification with maceration occurring at a temperature close to 28 °Cto favour the dissolution of the colouring substances contained in the grape skins , followed by post.fermentative maceration .After the drawing off , the wine is suitable for selling after a refining period inside Salvonina oak barrels of 24-30 months and then a further 6 months in the bottle .
