Vines are traditionally widely spaced and trained on granite pergolas called parrales to enhance sun exposure and prevent grapes from fungal disease. Less labor intensive and costly, many vineyards have switched to the espaldera system - a local variant of the Geneva Double Curtain training system. Some producers believe that while this system produces a lower yield, quality is enhanced. Yields range from three to five tons per acre. Careful harvesting (the grapes are hand-picked in small plastic 40 pound crates) and temperature control have revolutionized winemaking in Rías Baixas. Grapes are delivered to the winery as fast as possible to avoid oxidation, and the must is fermented under meticulous temperature control in modern, stainless steel installations. Many producers carry out a slow, pre-fermentation maceration for anywhere between 6 and 10 hours at 50º F, to add complexity and extract more color and aromas.
