The grapes used for this Chianti Classico come from a great selection made in the vineyard. These grapes have excellent maturation characteristics. Before going into the stalk-remover, the grapes are further selected through a conveyor belt on which another final sorting of the bunches is made. After being separated in the most delicate way from the stalk, the grape bunch ferments in concrete vats. The skins maceration lasts about two weeks. During this process the necessary oenological techniques are implemented. The maturation and the ageing start in December, after the malo-lactic fermentation. The wine is moved into medium/large size barrels and rests there about 14 months. The ageing is made in bottle at least 3 months in thermo-controlled areas
