Tasting Notes (recommended):First, nose of morello cherry, blackberry jam, green tomato, some smoky aroma, salted toffee, changing then in peanut, paprika and laurel aromas. The mouth is ample and firm at the opening with caraway, blackberry, nutmeg, with some oaky notes; Tannin is crunchy. / Un premier nez de griotte, de confiture de mûre, de la tomate verte, du fumé et du caramel salé, qui évolue ensuite vers des notes cacahuètes, de paprika et de laurier. La bouche est ample et ferme à l’ouverture, du cumin, de la mûre à nouveau, de la muscade avec des notes boisées. Le tanin est croquant.

Vinification (Wine-making)

Method:Selection of plots, small yields, full maturity. Manual harvesting. Grape varieties vinified separately. Whole destemming. Cold preliminary fermentation, traditional vinification. / Sélection de « bouts de parcelles », petits rendements, pleine maturité. Vendanges manuelles. Cépages vinifiés séparément. Egrappage complet. Pré-fermentation à froid, vinification traditionnelle.

Length:Long maceration : 30 days. 12 months in cask, then bottled / Longue macération : 30 jours. 12 mois en barriques, puis mis en bouteille.
