The grapes are fully de-stemmed and wine making follows tradtional methods and these operations take place at carefully regulated temperatures.

Vatting is long (around 3 weeks) enabling as much substance to be extracted as possible from the grapes. The wine is aged in oak barrels, which are renewed annually, for 12 to 18 months depending on the vintage. Racking is carried out every two months to clarify the wine naturally. It is the fined with egg whites in the time-honoured fashion before being bottled. Clos des Amandiers is blended after selectively tasting all the barrels. It may be enjoyed as soon as it is bottled or laid down for a few years.
