The wine displays a fascinating mix of berry fruit and spice combined with black pepper and oak spice to add complexity. Soft grape tanins supported by oak tannins fill out the mid palate and the freshness on the finish lead to a very appealing wine. Best expression with fine cuisine, goose, rabbit casserole, cassoulet, beef Stroganoff, barbecued meat, osso bucco, game pie, tandoori chicken and ratatouille. Perfect as well with mature hard cheeses. Recommended maturation potential: 8 years. International awards: Concours Mondial de Bruxelles 2009: Silver Medal for DG Syrah 2007.

The annual rainfall is more than 700mm, so irrigation is not necessary. The prevailing winds also decrease the necessity to spray. The vineyards are well established being on average over 35 years old and have no problem to ripen the grapes to full ripeness.
Healthy grapes were picked at optimum ripeness.
Grapes were fully crushed and destalked before a 3 day cold soak, followed by fermentation aided by the inoculation of yeast. Good colour and tanin extraction was achieved by regular pumpovers and gentle pressing took place before dryness. The wine was racked to barrel to complete primary fermentation and malolactic fermentation. It continued to mature in French oak barrels (50% new) for 10 months. R/S: 2g/l.
