Tasting Notes (recommended):The wine is aromatic and fruity with bone-dry finish. It is refreshing and light with hints of pineapple and melon on the palate. Maturation potential: 2 to 3 years. Ideal with seared tuna, chicken, smoked salmon, shellfish, creamy pasta dishes, artichokes, white meat dishes and ham. Growing Climate / Vintage Conditions:14 year old vines on 4-wire Perold trellising system. Drip irrigation controlled by a computer system through meters and tensiometers.

Type of Harvest:Machine harvested. Night harvested at optimum ripeness. Yield 13 tons per hectare.

Vinification (Wine-making)

Method:Style: A fruit-driven, dry white white wine. Vinification: Cold fermentation. Unwooded. Artificial injection of carbon dioxide through a porous "candle" into the wine which is chilled. This then dissolves in the wine which is stored in pressure resisant tanks, filtered and bottled under presure. R/S: 6.1 g/l
