Harvest is done by hand or by machine, depending on grapes and sanitary evolution. Sorting on table. 100% destemmed, crushing.
Cold pre-maceration 5░C for Syrah and Duras grapes varieties.
Fermentation at 28░C maximum.
Maceration from 18 to 20 days. Micro-bubbling under floating cap for Syrah and Merlot vats.
