Cool and airy with variations in temperatures during the day.
Fermentation of the must, obtained from grapes carefully selected, placed in samll baskets and subjected to a soft pressing, is begun in stainless steel tanks at controlled temperature
The liquid is then racked into medium toasted barriques, where fermentation is slowly completed. The entire process lasts 20 days.
