The colour is a clear ruby red with pomegranate reflections. The smell is complex, wide, intense adn persistent. There are also light touches of vanilla, a feeling of ripe fruit and spices. The taste has a good structure and reveals the features of the vine-stocks it is made from. It combines well with red meat, game, and especially with the traditional grilled duck's breast, or else with the no less typical lamb in scottiglia. It should be served at around 16░ C.

In special, temperature controlled vinification tanks that allow constant maceration of the marcs for around 25/30 days Ageing: Aged for 6 months in 50/60 hl barrels, one year in 5 hl Allier barrels and 6 months in bottle.
