Vinificación (elaboración del vino)

Método:ENGLISH : The grape harvest is brought in by night to prevent oxidation and avoid hogh temperatures. Macération period of a few hours. Fermentation at a temperature of 17° with natural yeasts. After racking, stirring of thr less in French-oak barrels. FRANCAIS : Vendangé de nuit pour bénéficier de la fraîcheur et protéger les arômes, macération de quelques heures. Fermentation régulée à 17° avec des levures indigènes. Après soutirage, bâtonnage sur lies fines dans les pièces en chêne français.
