Notes de dégustation (recommandé):COLOUR :Ruby red , with garnets red shades. BOUQUET: A hint of red fruits , such as cherry , sour cherry , raspberry and aromas ( cinnamon ) or oriental spices . Ripe it also has a perfume of leather . TASTE : it has a balanced acidity , with harmonious and persistent flavour and a dry aftertaste. BEST MATCHES: Excellent with red meat courses and poultry as well as with mature cheeses.

Vinification (fermentation)

Méthode:Classical red vinification , with maceration occurring at a temperature close to 28 C° to favour the dissolution of the colouring substances contained in the grape skins , followed by post-fermentative maceration . The wine is suitable for selling after a refining period inside Salvonian oak and French barrique barrels for 24-36 months and then in bottles for 3 months
