A light straw colour with vanilla, peach and tropical fruit on the nose. Citrus and vanilla prominent on the palate. Creamy and opulent with a good balance between wood and fruit. Will benefit from 4 years cellaring. Great with pan-fried garlic prawns and pasta carbonara. No competition entered.
100 % Chardonnay
Malmesbury shale soils.
4-wire Perold trellising system with drip irrigation. Southern slopes. Rootstock R99 and R110.
The grapes were picked at optimum ripeness. Strict crop reduction to yield 8 tons per hectare.
30 % of the wine was fermented on the lees in French oak barrels for 6 months to obtain a rounded mouth-feel and to add complexity. The 70 % balance was fermented in stainless steel tanks. The wine was blended before bottling.
