Aromatics of sweet dark plums with black berry fruit, subtle dried herbs and hints of chocolate give complexity and intrigue. Intense ripe fruit flavours abound on the palate, laced with complex savoury notes. The silky texture, refreshing acidity and fine tannins give this Pinot Noir distinction and balance.

Although the 2011 growing season started slowly, with a cooler and wetter than normal spring, the warm dry months prior to harvest ensured healthy grapes with flavour and phenolic ripeness without excessive sugar levels. The resulting wines have intense bright fruit flavours and balanced acidity and tannins.
Each parcel of Pinot Noir was cold soaked for 3-5 days before fermentation in open topped vats. Plunging was carried out twice daily to ensure gentle extraction of tannin and flavour. Post ferment maceration was carefully monitored to attain balance between the fruit weight and tannin structure. After malo lactic fermentation the batches were aged in French oak barrels and stainless steel tanks prior to careful blending and bottling.
