The wine combines the grassy flavours of Sauvignon Blanc with the citrus flavours of a lightly oaked Chardonnay. It has a good acidic backbone which adds length. Fresh and crisp. Maturation potential: 2 to 3 years. Screwcap. Food suggestions: creamy pasta dishes, roast pork, veal, grilled fish, cape salmon, shellfish, chicken and creamy cheese. 53% Sauvignon Blanc, 47% Chardonnay.
Well-drained alluvial sandy soil; Karoo.
16 year old vines on 4-wire Perold trellising system. Drip irrigation controlled by a computer system through meters and tensiometers.
Machine harvested at night at optimum ripeness. Yield 13 tons per hectare.
Style: A fruit-driven, dry white wine. Vinification: Cold fermentation. The Sauvignon Blanc and Chardonnay were vinified separately and blended after stabilisation. The Chardonnay was lightly oaked for 5 months on French oak staves. Minimal intervention in the natural process of vinification, allowing the cultivar to express its individual characteristics and the soil of its origin. R/S 1.40 g/l
