Vinification (fermentation)

Méthode:Traditonal Ripasso tecnique consists in refermenting a young Valpolicella on the skins , still impregnated with sugars an yeasts cells of the semi dried grapes previously used to make the famous Aamrone. After three years of maturation , the wine becomes more harmonios and velvety : this is the ideal time to enjoy it.
