This wine is aged in barrels, half of which are renewed annually, for 12 months. Racking is carried out every two months to clarify the wine naturally. It is then fined with egg whites in the time-honoured fashion before being bottled.Serving :Serve at about 16-18░C.Tasting :Now and during 8 years

2 ha 20 Sandy clay over chalky subsoil
Harvesting is manual and the grapes are sorted in the vineyard.
The grapes are fully de-stemmed and wine making follows traditional methods, while benefiting from modern temperature regulation techniques. Vatting is long (around 3 weeks) enabling as much substance to be extracted as possible from the grapes.
