Método:ENGLISH : The grape harvest is brought in by night to prevent oxidation and the use of large quantities of SO2. Fermentations are temperature-controlled using natural yeasts to preserve primary aromas. FRANCAIS : Vendanges de nuit pour éviter l’oxydation et l’emploi massif de SO2 , les fermentations s’effectuent avec des levures indigènes à températures contrôlées pour conserver les arômes primaires.
