In the heart of Umbria, Villa San Rocco rises up on the hills facing Todi. The centuries-old country residence is home to the San Rocco Estate: a farm, vineyard and farmhouse inn. The goal of this family-run business is to produce and otain excellence in both the wine and gastronomic offerings guest are served at the inn. The productin philosophy is based on the principles of TOTAL QUALITY with a special focus on the vine cultivation techniques and the wine making process. The grape harvest is carried out strictly by hand and in crates. Only the best grapes are selected, which are differentiated by varietis and vineyard. Modern wine-making technologies, the result of the professionalism and passion of the enologist Dr.ssa GRAZIANA GRASSINI, ensure the obtainment of prestigious wines in which the aromas of the fruit stand out, featuring a balanced,well-rounded taste. The varietis of grapes grown on the property include Sangiovese,Merlot, Petit Verdot red grape in addition to Grechetto di Todi,Viogner, Falanghina and white Muscat. The wine cellar is located in a building adjacent to the Villa and is equipped with state-of-the-art technologies for the vinification of grapes: temperature controlled fermentation tanks, a grape processing area with a selection table, the destemmer/crusher and hydraulic press. The ground floor and the basement of the Villa house the centuries-old cellars where the wines are aged in oak barrels (Tonneaux) and cement barrels in the shape of an egg.
