The distinguished wines of Jerez have exceptional character.
Over 90% of production is with the white grape variety Palomino. By the end of
2005, sales of 20-year-old VOS (Vinum Optimum Signatum or Very Old Sherry) and
30-year-old VORS (Vinum Optimum Rarum Signatum or Very Old Rare Sherry) were up
by 25%. Of 225 wines tasted by the Peñin Guide (including about 30 VORS and 15
VOS), only two scored lower than 80 points.
