| Method |
The grapes are pressed immediately after being picked and the juice ferments in vats in the traditional way. Temperatures are regulated at between 18 and 20 ° C, so as to slow fermentation down and extract as many aromas as possible. |

Ageing is very short ; the wine is bottled after fining within four months of being harvested. |
