Vinification (Wine-making)

Method:The wine-making process is "off the skins", with direct pressing of the grapes and immediate separation of the must from the skins, followed by static clarification and fermentation at a controlled temperature (20°C). Each single grape is vinified separately and the blend is made only in the spring following the harvest, thus ensuring that besides the differences that might between the different vintages, the characteristics of the product remain virtually intact
