Tasting notes : It is the dense garnet hues which characterise this cuvee at first glance. Its nose is still a little restrained, though spreading sweet notes of violets and poppy. Exposure to the air creates the fragrance of the hive as scents of wax, propolis and pine emerge. All of this on a very pure base of fresh grapes. On the palate, from the beginning to the end, the volume of this wine is in evidence. Fine and firm tannins, dense and full bodied link the structure well and the very judicious acidity make it a wine with good breeding. Pairing wine & food : Try it with Indian food where the powerful Syrah copes easily with the spices.

Soil : ploughing of the ground-cover when necessary. Plot by plot selction. Grapes are 100 % destemmed, crushed and kept in vat for 2 to 3 days at a low t° of 12 °C(53°F) with one pumping over a day. Then maceration for 25 to 30 days under a warm controlled t° of 25°C to 35°C (77°F to 95°F). Natural Yeasts. The 2 juices (from the draw off and the press) are matured separately and assembled before bottling. Aged in barrels
