Manual
After the manual harvesting, the grapes are de-stemmed and crushed. The fermentation takes place at at a controlled temperature of 28ºC. During fermentation the maceration is carried out by means of a process of periodic pumping over. Tanning lasts about 8 days. Following alcoholoic fermentation, there is a malolactic fermentation. The wine is matured in tanks for 1 year and the best lot is then matured in oak.
