Tasting Notes:Balanced structure, light body as appropriate for a cava of medium alcoholic strength, well constituted, rather non-astringent, due to the very light pressure used for grape-pressing. Fruity bouquets resembling tree fruits (apple, pear) due to Chardonnay and Parellada varieties, very delicate tertiary aromas, acquired during a prolonged period of minimum 36 months in the wine cellar, as is typical in a Gran Reserva Cava.

Vinification (Wine-making)

Method:The well-differentiated properties of this cava result from the microclimate of the village of Òdena, in contrast with others of the same appellation. The wine-making process takes place at low temperatures and preserves the fruity bouquet, whereas the high-quality of the added yeasts prevent wild fermentations that could result in strange aromas or flavours.
