The wine making of the grapes coming from the “Casot” cru, means a long and slow maceration of the skins, immersed in the must for a period that, with the best vintages, can reach up to one month. This process is carried out so that the vigour and body of the wine explode into universe of perfumes and spices, following the ageing and refining periods in the bottles. For the wine making of the “Marcarini” we prefer shorter periods of time in order to obtain a wine that is ready to be consumed and rapidly expresses its own characteristics. Its particular structure makes it delicate and suitable for all tastes.
