Shading from dark violet to aubergine with a purple tone at the edge of the glass. The wine is bright, rendered opaque due to its density and has a concentrated appearance in the glass. Nose - A silky smooth aromatic framework with smooth jammy notes of blackcherries, blackcurrants, blueberries and raspberries. The second nose provides refreshment with notes of liquorice, violets and mint, followed by distinctive notes of barrel ageing (coffee, torrefaction). Good potential for increased complexity in the coming years. Palate - The attack on the palate is soft and smooth and loaded with jammy fruit flavours. The wine hides remarkable richness and balance on the palate, with an array of fruity flavours similar to those found on the nose. Velvety yet finely coarsed at the same time, the finish reveals ripe and spicy tannnins and a very good length. This wine is most suitable for keeping, given its richness and fine structure. By Corbières and Languedoc standards, this wine is a divine monster and an excellent vin de garde. Tips on serving: Serve at 16° -17°. Decant a good hour prior to serving This is the perfect wine for leaving hidden away in your cellar for several years. Food and wine matching suggestions: Quail in truffle sauce, wild game in mushroom sauces, steak in red wine sauce, coq au vin, rabbit with prunes, pork ribs in caramel sauce, duck with olives, well-aged cheeses. (blue and goat cheeses especially)
