Robe of a very fine white gold colour with pretty reflections. Regular and fine sparkle. Nose with fine fruit expressions, floral. Fine and delicate end of mouth. Pleasant end. To serve fresh, well chilled. Delicate Crémant can be served during a meal.

Blend of Chardonnay, Pinot Noir and Auxerrois.

Best plots of Coteaux d’Obernai. Clay-limestone soil on Upper Muschelkalk, gently sloping.

Located on the hills at the top of Obernai. It produces rich, full and distinctive wines.

Harvested by hand. On the skins for 2 weeks with manual punching of the cap for better extraction. Must fermentation starts thanks to natural yeasts and last from 4 to 10 weeks in stainless tanks with regulated temperature. Fermented with regulated temperature. Must fermentation starts thanks to natural yeasts and lasts from 6 to 12 weeks. His fine sparkle and his bubbles are the fruit of the traditional and strictly regulated champagne method. As for Champagne, the sparkling of Crémant is the result of the second fermentation in bottle. The base wine is bottled with addition of a blend of sugar and yeasts. The bottles are stored horizontally on laths in the cellar. The second fermentation or “bottle fermentation” proceeds slowly, at low temperature. The wine ages 36 to 60 months on its yeast deposit to give the full expression of its elegance. Then, the bottles are placed neck in bottom on sloping racks. The yeast deposit is involved against the cap by riddling. Then, this deposit is frozen by steeping in a glycol solution with -35°C and it is ejected from the bottle by the pressure of carbon dioxide. Lastly, the bottle is filled by an addition of sweetening dosage to give a Crémant Brut.
