A great Dolcetto of Dogliani, with a few other wines is the head of a renewal of the interpretation of this vineyard, with the characteristics of an important wine. In the mouth it has a rich and consistent body. The balance of the extracts is great, with controlled tannins, typically contained acidity and great softness. Long and aromatic final with a pleasant touch of apricot-stone. (duemilavini 2001) Vhis versatile wine is best served at 18°c, and is ideally drunk with starters, first-courses, white and red meats, either roasted, stewed or in casseroled, dishes featuring truffle, roasted or stewed anchovies and mature cheeses. This wine is bottled without being filtered as the wine is bottled at the end of August, the wine is ready for sale after 50-60 days in the bottle. Best drink within 6-10 years of the harvest according to the vintage

the vineyard enjoys a south-westerly exposure at an altitude ranging from 450 to 500 m. a.s.l. Sand content 27%, Silt 51%, Clay 22%.

the grapes are harvested manually in the last week of September.

in steel vats with controlled fermentation temperature of 25-30°C. Drawing off after 5/10 days. Malolactic fermentation induced and completed at constant temperature, before the winter.
