LE VIN : CHARACTERISTICS OF THE WINE: The wine has an attractive sparkling appearance, and you will really love its red fruit flavours – wild strawberry, raspberry, and blackcurrant, interspersed with floral hints and a spiky exotic element. The first impression is very fruity, and then a full body develops before a long, clean finish. The overall impression is of a well-balanced, very attractive wine. To be drunk at quite a low temperature 8°C - 9°C (45°F - 48°F). Like many rosés it can be drunk as an aperitif, but is also suitable for drinking with summer dishes, particularly with mixed salads, starters, and Mediterranean dishes.

100% Syrah VINE MATURITY: The vines are between twelve and fifteen years old

TERROIR: The wine’s terroir (an area with unique local conditions) is very unusual, with vines growing on river terraces from the Villafranchian age (which marked the end of theTertiary age and the beginning of the Quaternary). These ancient terraces are composed of quartzite gravel and clay, making for acidic soil very rich in silica. This type of terroir is very good for growing vines, even though yields are low. However, the wine made using grapes grown here is well-balanced, with many flavours, making for nicely-coloured dark red wine which has a relatively high alcohol content.

AVERAGE YIELD: 3.24 tonnes per acre (8 tonnes per hectare). 852½ gallons of wine per acre (5,700 litres per hectare). The whole of the vineyard is run according to Guyot vine-growing methods

WINE-MAKING METHODS: Grapes are harvested by machine, with grapes separated from stems as soon they reach the cellars. After undergoing whole-grape maceration for several hours the vats are drained of juice, the juice is seeded, and then it is fermented at a low temperature.
