To drink with red meat, delicatessen and cheese.
PRODUCER : The Château de Calce belongs to the cellar of Calce, as all the members joined together to buy this estate, located just beside the village. SOIL : Gilded and grey schists of Agly River valley. The vineyard spreads among schisteous hills covered with "garrigue" vegetation (Genevar trees, thymes, rosemary etc...)These lands of high hills are a natural reserve of wild game as rabbits, wild-boards and partridges. CLIMATE : The area of Roussillon is the most sunny part of France. The grapes ripeness is often improved by the northern wind "La Tramontane", dry and violent, but also by the sea-wind.
VINEGRAPES : 40 % Grenache noir 40 % carignan 20 % syrah VINIFICATION : whole grape vinification for carignan and syrah. Classical way of wine making for the grenache noir
