We source our Pinot Noir grapes from specific sites within Monterey. The smallest of these vineyards lies on the eastern side of the Salinas Valley, where its loamy sand soils provide ideal drainage, thus adding to the concentration and density of the wine. Our largest vineyard is just below the Santa Lucia Highlands. Both of these vineyard enjoy coastal fog and Pacific breezes that allow for a long, cool growing season. The apperance of our Pinot Noir is a deep garnet color. The aromas display enticing strawberry perfume with hints of cherries and lavender. The palate shows ripe strawberry with dried cranberry and spice tones.

The 2005 vintage was ideal for growing Pinot Noir. The weather was moderate with a dry fall, which allowed the grapes to ripen at an even pace and develop well-defined varietal character.
Our Pinot Noir grapes are crushed and cold soaked for 48 hours prior to fermentation. After the cold must is heated to 90F, fermentation takes place in open-top fermenters. The grapes are punched down four times a day to keep the cap moist. Once fermentation is complete, the wine is transferred to French oak barrels for ageing.
