Ample, delicate, highly elegant with notes of wild flowers, peach and spices. On the palate its silky harmony, backed by a pleasing acidity, makes it especially attractive. Life cycle: within 4-5 years Accompaniments: fish-based dishes, assortment of hors d'oeuvres. Serving temperature: 10-11° C.

Chardonnay (85%), Sauvignon Blanc (15%)

White tufaceous marl, poor in organic substance but rich in microelements, especially boron and manganese. Vine training system: Guyot Area of provenance: Castelnuovo Calcea - Montemareto, Piemonte, Italy. Year of planting: 1995 Surface area: 3 hectares Rootstocks per hectare: 6000 Yield per rootstock: 1.2kg, the equivalent of 75 quintals per hectare.

Average height a.s.l.: 230 metres. Exposure: south, south-west.

Fermentation: the must ferments partly in 15-hl oak casks and partly in steel vats, the process is preceded by cryo-maceration of the grapes. Maturation: the wine remains, in the fermentation vats, on its own yeasts for 6 months before being put into the bottle to refine.
