Pale straw colour gaining intensity over time. Flowery scents, with banana, vanilla and yeast hues. The palate perceives the residual CO2 from secondary fermentation. The body is supported by sapidity and harmonizes well with generally moderate acidity. Ideal for starters, first courses (pasta, homemade noodles and ravioli, rice, etc.), fish, shellfish and white meat. Serving temperature: 9-11° C.

The grapes are harvested in the following vineyards: -“El Valon” (the Valley), located in Pratorotondo, at the foot of the Serra Masio hill (Canelli). The vineyard, the first to bring back the tradition of Chardonnay in Piedmont, was planted in 1978. It covers an area of one hectar and is 170 meters above sea level. With a northwest exposure on a 10% slope, the plot has a widely prevalent calcareous soil, which favours water drainage and is poor in organic substances, with alternating strata of sand, tuff and clay. Owing to the low ridges around it, the site enjoys many hours of lighting without heat peaks, thanks to its exposure and to constant breezes. Distances between trellises and vines vary between 2 x 0.8 m and 2.3 x 0.95 m, with a maximum wire height of 2÷2.3 m. The grapes, grown at a height of 0.55÷0.70 m, are always in a very healthy state, and are characterized by excellent aromas and acidity, that make it possible to delay harvest until the desirable sugar content has been obtained. The presence of Chardonnay muscat is significant and adds to the bouquet’s complexity. -“El Camp del Ghèra” (Guerra’s Field), located on the Braglia hill (Canelli). The vineyard, planted in 1990, has an area of 7,620 sqm and is located at an altitude of 190 m a.s.l. on a hillside facing North-West by West, with a slant of approx. 7%. The soil varies from shallow sands and limestones to deep clays. The site is surrounded by a favourable skyline that ensures plenty of light. Ventilation is scarce during the day, when high temperatures can be reached, especially in the afternoon, while at night they drop dramatically. Trellis and vine distances are only 1.2 x 2.5 m because of the vines’ remarkable vegetative strength. Grapes are grown at 0.6 m, while the last wire is located at a height of 2 m. The grapes typically ripen early in the season and rapidly reach high sugar contents, poor malic acidity and intense fruity aromas.

Depending on the year, harvest begins Sept. 3rd-10th and ends on Sept. 13th-20th. In 1996, the grapes were gathered between Sept. 9th and Sept. 13th. Vinification takes place in stainless steel vats only, at a temperature of 17-20° C, with partial malolactic fermentation. The wine is left on the lees at low temperatures for some time, in order to gain a durability of 2-3 years. Through the adoption of some simple techniques, the carbon dioxide developed during malolactic fermentation is preserved to maintain some degree of effervescence. Sulphur dioxide is limited to a minimum, in order to increase its protective power at the time of bottling and accordingly cut doses down by 30%.
