An elegant style of Cabernet Sauvignon that relies primarily on the berry and cassis fruit characters of the grapes which are enhanced by some sweet vanillin from American oak. A soft round palate makes this wine attractive for early drinking but with ample tannins to provide some cellaring potential. The balance of structure and fruit provides great flexibility with foods.
78% Cabernet Sauvignon, 16% Merlot, 6% Cabernet Franc
The fruit for this Cabernet Sauvignon comes from central Californias warm Delta valley south of Sacramento. A gradual & even maturation of the grapes during the summer of 2002 allowed for a delicate fruit structure and balance without overripeness as often happens further south in California.
Five days on-skin fermentation followed by 4 months of oak maturation results in a wine of delicate richness and balance. The addition of Merlot & Cabernet Franc develops the complexity and depth of the wine further in combination with classical Cabernet Sauvignon flavors.
