The Rapel Valley Wine Region is located in Chile’s Sixth Region, approximately 100 miles south of Santiago. The entire area has good drainage, high fertility, and tremendous agricultural aptitude, especially for red grape varieties such as Cabernet Sauvignon, Carmenère, and others.

Its climate is sub-humid Mediterranean. The Coastal Range lies to the west, and its low, even mountains allow for a moderate oceanic influence on the climate. The Pacific Anticyclone also plays an important role in concentrating the region’s 28 inches of annual rainfall during the winter months. Summer winds are predominantly from the south and southeast, creating a broad diurnal temperature differential with high daytime and low nighttime temperatures. The high temperature for January is 32°C (90°F) and the annual average is 14°C (57°F).

HAND PICKED

The grapes are hand-picked in the morning. After the crush they undergo a 2 to 3 hour cold soak to develop the color of the wine. It is then pressed under low pressure and allowed to settle, for a must with 100–120 NTU. Fermentation employs selected yeasts and takes place at 54°F for the first 8 days, after which the temperature is allowed to increase to 59°F and extends over a total period of 25 to 30 days. The temperature is abruptly lowered to stop the fermentation when the wine has approximately 5 grams per liter of residual sugar. It is then held for two weeks with battonage before being gently racked to separate the wine from its lees and treated with 30 ppm of sulfates.
