Colle del Re is an estate at 380 meters above sea level, in the area of Montecatone, in the Imola hill country in Emilia Romagna. The grapes, which come from select vine-stocks of the same estate, are used to produce this raisin wine. The vineyards, which have an excellent south-south-west exposure, are raised in double curtain pattern on clayey and gravelly terrains which, together with the special micro-climate, make it possible to grow high quality grapes. The density of the plant distances is 2 thousand strains per hectare, with an average age of 15/20 years. During the year, the vineyard i thinned out,and only the best clusters are allowed to mature. The harvest takes place during the time of maximum ripeness of the grapes, with a yield of 5000 kg per hectare, about 30% is set aside for raisining. Wine making is performed in the most traditional manner, by soft-pressing of the grapes, after pip removal. Fermentation in Allier oak vats then takes place in an environment with a controlled temperature. Once the fermentation is over, the product is refined in vats for 12 months, then bottled. It is further refined for another 6 months before being marketed. The colour is an intense yellow, with a touch of amber. The aroma is the typical one of Albana, with a fragrance of raisin fruit, vanilla and honey. The flavour is sweety, velvety, persistent with dry sweets, but also with foie gras and herbal cheeses. It should be served at a temperature around 8° C.
