In 1990 Marc Kreydenweiss converted to 100% biodynamic farming. Not only are the wines organically cultivated, without pesticides or commercial fertilizers, but the vineyard work is timed to the cycles of the sun, moon and stars. Farming in this manner not only enhances the health of the soils and increases disease-resistance of the vines, but the terroir character of each wine becomes increasingly defined.
The iron-rich soils of the vineyard site add much to the complexity and intensity of this Carignan-dominated blend. The maceration lasts 2-15 days under controlled temperatures. Fermentation is left to start naturally with native yeasts. The wine is then aged in old oak barrels.
