Hilly area , volcanic soil. Selected vineyards followed by the agronomist of the company, who undertakes to keep alive the indigenous vines cultivated since the ancient times in the Frascati district. The soil is permeable, rich in potassium, phosphorus and microelements. Production per hectare: kg 8.000 / 8500.

Manual harvesting in the first cool dawn hours. In the first decade of September just the vinification of Malvasia of Lazio takes place while for the other varieties we have a late vintage – end of October – .

The stalk is removed from grapes. Maceration on the skins for a 50% of the product for 24 hours, for the other 50% stay of the must on the skins for 36 – 40 hours. First soft pressing with only a 60% must yield. Fermentation at controlled temperature (16-17°C). Stay of the must together with lees for some months under controlled micro-oxigenation . Rest of 2 months in the bottle.
